Khoai lang rửa bào vỏ, rửa sạch thái miếng vuông khoảng 1 cm. Cà rốt thái hạt lựu. Hành tím thái nhỏ.
Đun nóng 170ml dầu ăn trong chảo, cho khoai vào chiên cho chín vàng đều rồi vớt ra đĩa.
Cho 30ml dầu ăn vào chảo, cho hành tím vào phi thơm. Thêm cơm nguội, cà rốt vào đảo tơi.
Đập trứng vào và đảo đều cho trứng quyện vào cơm và cơm săn lại. Thêm 1 muỗng canh nước mắm, 1/4 muỗng cà phê tiêu, 1/2 muỗng cà phê hạt nêm 1 muỗng canh tương ớt vào đảo đều cho cơm ngấm gia vị là xong.
